Brown Sugar Bacon-Wrapped Pineapple Bites

Ingredients

  • 1 small pineapple
  • 12 slices bacon
  • ½ cup dark brown sugar
  • ¼ teaspoon cayenne pepper, optional
  1. Preheat oven to 400 F. Line a rimmed sheet pan with aluminum foil, and place an oven-safe wire rack on top. Grease with cooking spray; set aside.
  2. Peel and core the pineapple and cut (36) 1-inch cubes. Place them in a bowl and set aside.
  3. Cut each bacon slice into thirds so you have 36 small bacon strips; set aside.
  4. In a small shallow bowl, combine the dark brown sugar and cayenne pepper.
  5. Wrap a piece of bacon around a pineapple chunk, and carefully roll it in the brown sugar mixture. Place the bacon-wrapped pineapple onto the prepared pan with the wire rack, making sure the bacon seam is on the bottom.
  6. Repeat until you’ve used all of the pineapple and bacon.
  7. Bake for 20 to 25 minutes, or until the bacon is crisp and golden brown.
  8. Let cool for a few minutes and serve warm.
