Bang Bang Pork Skewers Servings: 12 Ingredients: 2 pork tenderloins, about 2 – 2 ½ pounds total 2/3 cup mayonnaise ¼ cup sweet chili sauce 1 tablespoon sriracha 1 tablespoon honey 1 tablespoon vinegar (white or rice vinegar) Green onions, for garnish, optional Directions: Soak 12 wooden skewers in water for at least 30 minutes (or use metal skewers). Cut the pork tenderloins into 1 inch cubes. In a large bowl, combine the mayonnaise, sweet chili sauce, sriracha, honey and vinegar. Remove 1/3 cup of the sauce and set aside. Add the cubed pork to the remaining sauce and stir to coat the pork. Carefully thread several pieces onto each skewer. Place on a hot grill and cook for 8-10 minutes, flipping and brushing with additional sauce every couple minutes. Cook until the internal temperature of the largest pieces are 145F. Remove from the heat and garnish with sliced green onions and additional sauce, if desired. Back
