BBQ Pork Chop Sheet Pan Meal

Ingredients

  • 1 tablespoon smoked paprika (or regular paprika)
  • 2 teaspoons brown sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper, optional
  • 4 thick-cut boneless pork chops, at least 1-inch thick
  • 1 ½ pounds red potatoes, cut into ¾-inch cubes
  • 1 ½ pounds red potatoes, cut into ¾-inch cubes
  • 12 ounces green beans
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1/3 cup barbeque sauce

Directions

Preheat oven to 400F.

In a small bowl stir together the seasoning ingredients.

Spread the cubed red potatoes out on a rimmed sheet pan and drizzle with two tablespoons of olive oil and sprinkle with the 1 ½ tablespoons of the seasoning.  Toss to coat the potatoes evenly.

Bake for 15 minutes.

Remove the sheet pan from the oven and scoot the potatoes to one side.

Season both sides of the pork chops with 1 tablespoon of the seasoning. (The remaining seasoning can be saved for another time.)

Add the seasoned pork chops to the center and then add the green beans on the opposite side of the potatoes.

Drizzle the green beans with the remaining olive oil, salt and pepper.  Bake for 20 minutes.

Spread the barbeque sauce over the tops of the pork chops.  Bake for 5-10 minutes or until the internal temperature of the pork chops is 145F.

Let rest for 5 minutes before serving.
