Garlic Parmesan Pork Bites

Servings:  8 skewers

Ingredients

·         2 pork tenderloins, about 2 – 2 ½ pounds total

·         Garlic Parmesan Sauce

  • ½ cup butter, melted
  •   2 tablespoons minced garlic
  •   ½ cup grated parmesan cheese
  • ¼ cup fresh parsley, chopped

Directions

Soak 8 wooden skewers in water for at least 30 minutes (or use metal skewers).

Cut the pork tenderloins into 1-inch cubes.

In a large bowl, combine garlic parmesan sauce ingredients. 

Remove 1/4 cup of the sauce and set aside to be brushed on when the pork is fully cooked.

Add the cubed pork to the remaining sauce and stir to coat the pork.

Carefully thread several pieces onto each skewer.

Place on a hot grill and cook for 8-10 minutes, flipping every couple minutes.

Cook until the internal temperature of the largest pieces are 145F.

Remove from the heat and brush liberally with the reserved garlic parmesan sauce (warm in microwave if needed).
