One Pan Sausage Gnocchi

Ingredients

1 lb Italian sausage, mild OR spicy (loose)

1 tbsp extra virgin olive oil

1 cup diced onion

1 pint cherry tomatoes

5 oz baby spinach (fresh)

1 cup heavy cream
-
1 lb potato gnocchi (from refrigerated section)

1 cup mozzarella (shredded)

½ cup ricotta

2 tbsp basil (fresh, roughly chopped)

Salt and pepper (to taste)
Directions
- Preheat oven to broil and set oven rack to the top slot.
2. In a large ovenproof skillet over medium high heat, cook sausage, breaking up into pieces and only stirring every
few minutes to allow the sausage to sear, until cooked through.* Use a slotted spoon to remove from pan.
3. Add olive oil to hot pan along with onions and cherry tomatoes. Cook, stirring occasionally, until tomato skins
begin to burst and soften, about 3-4 minutes.
4. Crush tomatoes to release liquid. Stir in spinach, a handful at a time, until it is all wilted. Stir in heavy cream and
season with salt and pepper. Bring mixture to a boil.
5. Add gnocchi and cooked sausage. Stir until evenly distributed and remove from heat.
6. Stir in mozzarella and then dollop the top with ricotta. Place in oven on top rack until bubbling and golden brown.
7. Remove from oven and garnish with fresh basil.
*Ground pork is safe to eat when cooked to 160°F.
