Pulled Pork Ramen Soup

Pulled Pork Ramen

Servings: 6

Ingredients:

  • 1 teaspoon ginger paste
  • 1 tablespoon minced garlic
  • 1 tablespoon chili crisp
  • 6 cups chicken broth
  • 2 tablespoons soy sauce
  • ½ teaspoon black pepper
  • 2 green onions, sliced
  • ½ cup sliced shiitake mushrooms
  • 1 pound pulled pork
  • 1 cup coconut milk, optional
  • Serve with fresh sliced green onions, jammy eggs, matchstick carrots, and cilantro, optional

Directions:

In a large pot, stir together the ginger paste, garlic, and chili crisp.

Add the chicken broth, soy sauce, black pepper, green onions, mushrooms and pulled pork; turn the burner to medium-high heat.  Bring to a boil, stirring occasionally.

Reduce the heat to medium-low and add the noodles (discard the seasoning packets).  Cook, stirring occasionally for 2-3 minutes or until the noodles are soft.

Remove from the heat and stir in the coconut milk, if desired.

Serve hot with toppings.
